Blueberry Scones for Summer Holidays

We’ve got summer holidays on our minds over here, what about you?

Time to celebrate Memorial Day and the 4th of July…

perfect occasions to visit your local farmers’ market and buy fresh blueberries…so, today I’m sharing a yummy Blueberry Scones recipe!

I adapted the RECIPE from La Petite Brioche HERE:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 tablespoon grated orange zest
  • 1 stick cold unsalted butter, grated
  • 1 large egg, lightly beaten
  • 1/2 cup cold heavy cream
  • 1 cup blueberries, fresh or frozen
  • extra heavy cream for brushing the tops
  • raw sugar for sprinkling the tops
  • I made two simple changes… 1/2 tablespoon grated orange zest and salted butter

In the bowl of an electric stand mixer add all the dry ingredients, including the orange zest. Then add the grated butter.

Whisk the egg and cream together, and add slowly to the mixture on low speed until blended. The batter will be lumpy. Add the blueberries on low speed.

Lay the dough out on a floured surface and knead.

Form the dough into a square 3/4 inch thick.

Cut into 8 triangles and bake at 380 for 20-25 minutes. Let cool and enjoy!

I should mention, this was our first try at scones…and they turned out moist, and delicious! They always seemed intimidating to try, but they were very simple actually.
